Tahini Herb Pesto (Gluten-Free & Paleo)
THIS RECIPE IS GLUTEN-FREE AND PALEO.
Ok, so this pesto. Oh my. You seriously have to make it. Like now. It is so easy, so delicious and has so many uses.
Here are a few ways to use this bursting-with-flavour Tahini Herb Pesto :
1. Pizza
Spread it on homemade pizza crust and turn your so-so pizza into swanky show-stopper!
2. Veggies & Dip
Scoop up your favourite veggies with this stuff, your veggie game will be off the chart!
3. Crackers
By simply adding this spread to a cracker would make a beautiful holiday hors d’oeuvres. Try topping it with half a cherry tomato and cracked pepper.
4. Pasta or noodles
Toss and serve.
5. Eggs
Drizzle over an omelette.
Tahini Herb Pesto (Gluten-Free & Paleo)
- 2 cups basil (or equal parts basil and parsley)
- 1 cup baby spinach
- 1 clove garlic
- 1/2 cup tahini
- 1/2 cup olive oil
- 1/2 medium lemon, zest and juice
- 1 tsp salt
- 1 tsp pepper

Add all ingredients to a high-speed blender and blend for 20 seconds.

Scrape down sides and blend again for another 20 seconds until a well combined spread forms.

NOTE: This recipe creates a thick spread or dip. To use as a drizzle, simply add more olive oil 1 tbsp at a time until the desired consistency is reached.

I have listed all ingredients simply by name, and have left off words such as "organic", "grass fed", "free-run" etc. I encourage you to do your own research and consume what works best for you.
