paleo pesto
Tahini Herb Pesto (Gluten-Free & Paleo)

THIS RECIPE IS GLUTEN-FREE AND PALEO.

Ingredients
Makes about 1.5 cups
  • 2 cups basil (or equal parts basil and parsley)
  • 1 cup baby spinach
  • 1 clove garlic
  • 1/2 cup tahini
  • 1/2 cup olive oil
  • 1/2 medium lemon, zest and juice
  • 1 tsp salt
  • 1 tsp pepper
Instructions
  1. Add all ingredients to a high-speed blender and blend for 20 seconds.

  2. Scrape down sides and blend again for another 20 seconds until a well combined spread forms.

  3. NOTE:  This recipe creates a thick spread or dip.  To use as a drizzle, simply add more olive oil 1 tbsp at a time until the desired consistency is reached.
