Fall Harvest Soup with Fennel Seed & Pork Sausage
Ahhhh…Fall. I just got back from my Dad’s place with arms full of his Autumn harvest. Tomatoes of every colour and shape, green beans, potatoes, garlic, carrots, mixed greens, basil, and parsley all to take home and inspire my next creation.
I have a weekend of cooking at home planned (Scott thinks we’re cleaning, which I feel is well deserved. Summer has been busy with most weekends away. Since moving to the big city, I’ve joined a crossfit gym (for lack of mountain bike trails accessible from my door), and my body is feeling pretty spent.
Inspired by a basket full of homegrown vegetables, I whipped up this Fall Harvest Soup with Fennel Sausage. I’m a dipper, a soup-dipper that is, so I made up a paleo flax bun to accompany my lunch.
