Rosemary Mandarin Marinade for Beef, Chicken or Pork
Toss your favourite meat in this Rosemary Mandarin Marinade, let sit for a minimum of 1 hour, and enjoy a pure flavour explosion!
You know you are a true foodie when 1 simple ingredient can inspire so much awesome-ness.
With Christmas only days away, mandarin oranges are being sold on every street corner on Roncy, with their festive green leaves still in tact.
Every time I walk by, I reminisce about being a kid and devouring 5 or 6 at time. Easy to peel, no seeds to spit out, and sweeter than the average Naval, these citrus filled balls of natural sugar are dreamy to young and old alike.
As seen in this photo, I used the marinade for flank steak, before tossing it on the BBQ.

What I used to make this recipe:
Rosemary Mandarin Marinade for Beef, Chicken or Pork
THIS RECIPE IS GLUTEN-FREE & PALEO.
- 2 mandarin oranges, zest
- 1/4 cup lime juice
- 1/4 cup avocado oil (or olive oil)
- 1 tbsp rosemary, fresh, chopped
- 1 tbsp Canadian Maple Syrup
- 2 cloves garlic, minced
- 1 tsp crushed red pepper flakes
- 1 tsp salt

Add all ingredients to a large mixing bowl and whisk until well combined.

Remove 1/2 of the marinade and place in a sauce pan and set aside.

Add meat of choice (beef, chicken or pork - my favourite is flank steak) to the large mixing bowl with the marinade.

Cover and allow to marinade in the fridge for a minimum of 1 hour to overnight.

BBQ your meat until a safe cooking temperature has been reached.

While the meat is cooking, bring the marinade in the sauce pan to a boil on medium-high heat.

Once boiled, turn down to low and simmer for 5 minutes.

When ready to serve the meat, drizzle each portion of meat with the reduced marinade. ENJOY!
