Preheat oven to 350 F.
Line 2 loaf pans (8.5" x 4.5") with parchment paper and set aside.
Add all wet ingredients to a food processor and process until combined.
Add dry ingredients to wet batter, and process until combined.
Divide batter equally between the 2 prepared loaf pans.
Slice 2 whole bananas length wise. Garnish each loaf with sliced banana, seed side up. Lightly press each sliced banana into wet batter.
Place loaf pans on middle oven rack and bake for 50 minutes.
Remove from oven, and insert the tip of a butter knife into the center of each loaf to ensure it comes out clean. If any batter is stuck to the knife, place back in the oven for 5 minutes or until knife comes out clean.
Let cool, slice and serve!
